Picky is fine except when it's based on ignorance of Chaucerian English. That carol dates back to the 15th century and yes, rosemary would've been pronounced that way. If you read ancient English manuscripts, the spellings and pronunciations can be very difficult to the modern reading. Y and I are interchangeable.
Yes, it may sound silly nowadays, but they are pronouncing it correctly. In Renaissance music, this kind of pronunciation was typical for keeping up the rhyme scheme.
