Well, it was just a prank, but I assume they're playing off the idea that saying "Happy Holidays" is becoming more strongly encouraged now, because of the growing diversity in America. In other words, "Merry Christmas" is not applicable to everyone, and could be taken as improper manners if it were said to someone who didn't celebrate it. To summarize, it is more politically correct to say Happy Holidays- some people prefer it, some people hate it.
