How many open apps can it handle? Does the chat go offline if you dont have certain applications open? If this constantly stayed connected in idle mode, this would be the ultimate communication device.

The best thing to do is to wait until you can get your hands on both -- and see what you think. I think the N900 *could* be brilliant... it depends how developers react to it.
That may be a problem in the states. Nokia really doesnt have carrier subsidies on their flagship devices. Usually, contract free. Also, they seem to cut themselves off to carriers due to our split 3g spectrums here.

how many open apps? that'll be dependent on the size/memory requirements of the app. But it won't be limited like your average phone.
the n900 will stay connected in idle -- e.g. via gtalk -- just, there's always a small battery overhead with any of that kind of thing.
