I think they only do 5 burgers because the rest of the menu is so awesome, it's like, who gets the burger? I went for this insane quail thing, ridiculous.
Hard to say if they are really any good. Went there for the famed burger. After waiting for 45 minutes to sit at the bar, waiting another 10-15 to order, were informed that they only serve five burgers a night, and they were out for the night, and were asked, "does that spoil everything for you" in a snotty condescending tone. Five burgers a night???? WTH?
@nuclearG1 You obviously work at a burger joint then, this place seems like a cafe or a bistro type that happens to have a burger on its menu. You kind of have to put that much detail in to your burger because places like that are charging double what a "burger joint" is charging so expectations are quite high.
I have been to Le Pigeon a number of times when traveling, Chef Gabriel is only a 5,000 mile side trip. Folks love these burgers, the joy is plainly evident.
Excellent instruction and still entertaining. I decided to comment because I am becoming more aware of food hygiene. When you set the slaw aside you picked a bit of the counter and put it in the bowl. But this is the same counter you had raw hamburger a moment before. I thought I'd mention this.

you could never do this if you had more than a few orders - can't spend THAT much time on ONE burger. I cook 10 burgers at a time!

You know here in France the beef isn't all ways cooked, steak tartar is very popular and steaks are always bloody.
