You're not supposed to glide on walls anyway, in RL the enemy can hear it. You're supposed to be an inch off. And yes, sometimes cover can be inadequate, where your head might not be sticking out, but in ranged combat say past 50 or so meters, that head shot would be quite difficult, and the enemy shooting back at you, so you factor in nerves, increased heartbeat, and if you know anything about shooting fundamentals, breath, form, and trigger squeeze, it doesn't take a genius to realize this.

They hit the wall when they take cover because they are probably running towards cover, there not gonna run stop and gently hide behind a wall, there gonna run into the wall without stopping, so you will hear there armor slamming into concrete, they can role in heavy armor because they are all highly trained and are physically capable of doing this in heavy armor, you doing this doesn't prove anything except your not as physically fit.

Another reason in the game why it's effective to evade fire and roll behind cover is because you gain about 30 feet of ground doing it. and when the characters are constantly doing it they're pretty much warping around the map. It's all scripted.

In real life you couldn't gain that much of unrealistic amount of ground by doing that maneuver.

The "Unnecessary Combat Roll" Article on google sums it up well.
