But if you buy a rib roast ask your butcher to cut it up into 1 to 1-1/2 inch steaks and you can save some $ (most butchers will cut it for free). Round steaks are cheaper but not real tender unless you heavily salt them with cooking salt for up to an hour, and rinse off the salt and surface moisture and dry just before grilling. This will tenderize the meat by breaking down the proteins and fibers. success -BBQ Pit Boys
You should only flip the steak once. And his grill marks are very bad. Whats with the tomato? I also herd the using a steak pick lets out all the juices. And you should let the steak rest for about five minutes before cutting it, and whats with the way he cut it. Very unprofessional.

you really shouldn't use a turning fork like that, piercing the meat gives a channel for the juice to travel through and thus out of the steak, best utensil to use is stainless steel surgical tongs.

I notice that after you handle the raw meat with your fingers, you use them to sprinkle seasoning (do you put the seasoning away for later use after you touched the raw meat) then after the meat is done, you took the cooked steak and placed it on the same cutting board that had the raw meat on it. While the steaks look good I prefer to let a good quality steak to stand on it's own merit-just rub lightly with a good quality extra virgin olive oil and sprinkle them some kosher salt and fresh ground black pepper. And anyone caught using bbq sauce on a rib-eye, t-bone, filet mignon or porterhouse should have their steak eating priveleges permanently revoked!
I am with you 100 percent, MickR55. And I'll also add that those who prefer well done steak NEED that barbeque sauce to mask the dryness of the beautiful piece of meat they ruined. Also, DO NOT apply pressure to your meat while cooking! This only squeezes out all that succulent juice.
We agree, doostoos1. Actually, many steak experts say that cooking your steak on a very hot black iron pan is best -the steak sears in its own juices. Searing your steak over hot charcoal gives you the same result in our opinion, if you use the method shown in this video.
NOTICE that it is juicy & full of flavor yet it doesn't have globs of sauce over it. I really think that using BBQ sauce is cheating because it seems like they are trying to cover up some sort of nasty taste or mistake.

If you want to make a tender meat you could marinate the meat with abit of bicarbonate of soda. Not only does it made the meat tender but the bicarbonate of soda also causes the meat to absorb the marinate faster.

Using charcoal is the best for steak grilling. Gas grills don't give that BBQ flavor. Its worth waiting for the coals to get hot.
