    I swore off electric smokers after multiple short outs - Hope yours lasts .. . That looks like a well built smoker!! The brisket came out perfect!!

  • @DAN71061 The Penzey's Arizona Rub has a Texas dry rub with a bit of tex mex flavor to it - very goo on pig and chicken.

    I smoke goat cheese and Gouda often - it's delicious. I find cheddar doesn't work too well - I did fresh mozzarella and it was ok.
