Yes it could, but I like a crispy skin and with the Egg and the beer can the meat is still very juicy! It is much harder to dry out food cooked in the Egg.

400 Degrees might be a little high.

It varied from 350 to 400. The 12 pound turkey took about 2 hours to reach 180 degrees which is much quicker that an oven.
