@lebrontravelled J.K. Rowling decided against it because she wanted to show the difference betwen Molly's maternal love for her family (She has, after all, just lost Fred and nearly lost Ginny to the killing curse) and Bellatrix's obssessive love for Voldemort. That's why Molly killed Bellatrix.
