I wonder if I can use agar-agar +a little oil to replace the eggs in this recipe. I've never made this kind of pudding before... I just might give this a try, this week!
I think as long as you can get some kind of thickening agent in there, you will be okay. The original recipe used corn starch (3 TBSP), instead of flour.
At worst you will end up with a thick butterscotch sauce - which will still probably be pretty tasty! ;) You could pour it over some type of cake or ice cream (do they have rice or soy ice cream over there!?)
my aunt loves butterscotch pudding, I'll give this recipe to her, I would make it but I despise coconut milk and anything that has anything to do with coconuts, I'm sorry, lol
And I try to avoid liquid milk products, just because they gross me out. Nothing against cheese or butter though - weird, i know. Just the liquid stuff I can't stand. Unless it's already in something I buy, then I'll eat it. LOL Yeah, don't even try to understand my quirkiness!
I've been a subscriber of your channel for a while, and I've always wanted to ask.... have you ever considered using different lightning? your videos always look orangy to me... Maybe it's just me, but it's so frustrating that no matter what color you use, everything looks very similar because of the light.... =)
Mmmhh maybe the settings on your camera... perhaps they're set for flourescent light, so the camera warms the image trying to "compensate" for the green colors on the fluorescent setting.
Sounds like an excellent topping for ice cream when hot, yum!!

You can always substitute cow's milk, or any other type of milk substitute you use & it will turn out fine. =)
The eggs & flour are what thicken it up, so it shouldn't matter what type of liquid you use.

And what would you suggest? I have 2 different types of light bulbs & it hasn't made a difference.
I think part of the problem is the camera as well.
Everything looks fine AS i'm recording, but once it transfers to the computer the color is different.

I've tried natural light too, since I have a huge set of windows right next to where I film, and it looks even worse than what you get here LOL

I'm using a Sony Handycam DCR-HC36 Digital Camcorder.
I just bought two Full Spectrum lamps, so no more lighting problems.
