It's the "Brazo Gitano", meaning gypsy's arm - the meringue shows just that, a ''rumpled sleeve''. At Columbia, leaving the flame to die out gives an added flavour - much like cotton candy. It's a great dessert for show if you haven't already ordered the Filet Chacho.
