Zero G is just a buzz word. On the International Space station they are still falling towards the Earth, in fact the acceleration due to gravity at the average of their orbit ~440 km is only a fraction less of what we feel at sea level, the trick is that they are falling but missing the earth as they fall due to the stations horizontal speed. On board this plane the whole craft is falling without power, like a broken elevator. and it's not about whether you're in a vacuum or not.

Yes, because you can hardly hit the velocity for exact zero-gee, but not nearly enough to matter. Space stations have something to the effect of 10^-4 to 10^-6 times Earth gravity. These flights must have more, but what wall you'd drift towards in 15 minutes is irrelevant when the floating only lasts for twenty seconds.

They don't head "straight" towards Earth. They take a path called a parabola. Imagine throwing a baseball up at a 45 degree angle. Notice that curved path that it takes as it changes it's direction and heads back down? That's a parabola. Thet jet flies in a curved path, causing everything inside to become nearly weightless (it's not perfect weightlessness, as there is still quite a bit of drag from the atmosphere). It has to do with centripetal force.

Well its actually MUCH safer to do it while in plane, rather than in space. This is because all the planes are inspected part by part and if they don't meet the FAA (Federal Aviation Agency) requirements, then they will postpone the flight in order to fix the issue. I should know this, i study Aircraft Mechanics. Also if you do crash, you shouldn't worry you'd be dead and be covered up!
