Evolution has been observed many times. Bacteria have quick reproduction and frequent mutations due to sloppy DNA copying and therefore are ideal subjects for evolutionary changes in a short period of time. That's why antibiotics keep ceasing to work, it is why bacteria has been observed to feed on substances like nylon which are completely new to nature (because they evolved the right enzymes to digest it). Also many field biologists have documented evolutionary events in wild animals.
