The PF making those wild corrections was using crosscontrols. Applying that much right aileron input without any roll/yaw would only occur if he was applying left rudder to counteract the yaw. This allows the aircraft to fly the runway heading whilst opposing the drift effect of the wind. Upon the flare the PF managed to keep the aircraft tracking runway centreline. Crabbing is a common crosswind approach, however the aircraft flies at an angle with wings level up untill the flare.
(If you are referring to the 757 T/O. The pilot may have been following the flight director, or without FD's trying to maintain runway heading due to crosswinds.
