must have been fighting some pretty stiff winds lol the yoke almost touched him stomach when he flared

The PF making those wild corrections was using crosscontrols. Applying that much right aileron input without any roll/yaw would only occur if he was applying left rudder to counteract the yaw. This allows the aircraft to fly the runway heading whilst opposing the drift effect of the wind. Upon the flare the PF managed to keep the aircraft tracking runway centreline. Crabbing is a common crosswind approach, however the aircraft flies at an angle with wings level up untill the flare.

(If you are referring to the 757 T/O. The pilot may have been following the flight director, or without FD's trying to maintain runway heading due to crosswinds.

Another great video!  Nice wingletted 737-300s. Looks like Air Baltic uses contract pilots (at least on the 757s) from various countries - that's very interesting.
