They used a clean vacuum bulb without powder and without gas, I would imagine. I wouldn't be surprised if Derren had one specially commissioned for this show, so that it was kept absolutely clean for the purposes of consumption.

but you don't bite you crush it between your teeth and then just keep grinding it until it turns back to sand then you can swallow it.

It is an ambigram. In fact, in one of the shows Derren Brown turns the card upside down in front of the camera when the "victim" chooses a treat. One flip of the card, and it becomes a trick... Not sure which episode it was however.

In Angels and Demons by Dan Brown ambigrams also play an important role.

Normal light bulbs usually have a small amount of inert gas inside to stop the filament wearing out too quickly. This looked pretty normal. I have seen it done, so I guess it can be !!!
