I use the emulator's built in recorder (my emulator is Nestopia) for the video and game audio. I export to AVI using the emulator also (I recommend Cinepak to Codec at 100% quality).
To record my voice I use Audacity, it's just free software. I then export that to an MP3 using LAME_enc.dll converter (also free).
Finally, I layer the two in Windows Movie Maker and upload the resulting MPEG to Youtube.
That fish would make some nice sashimi... X3

The white blocks must simply be the ones you can pick up and throw at enemies, they flash slightly. You've already used those. I might be wrong.
