It occurs naturally, encasing certain internal organs in cows, sheep, pigs, etc. It melts around the meat as it cooks, adding fat which can add flavor or keep a leaner cut of meat (like veal, as they note) from drying out.

it's fat is rich and keeps the moister in the meat/food that u stuffed..
