The focus on the strudel had nothing to do with the strudel so much as the story telling you that now he knew something wasn't right, he could sense how uncomfortable she was and being a man with his particular skills and intuition, he did everything he could to exploit that in hopes she would just crumble. He played the part of a very suspicious and smart man... hence, making her sit there and eat strudel with him was a good move.

I think the movie focus over the strudel to show how Lando is human and like good food. In a way it shows his human nature not as a killer but as someone who is simply good at his job. It also depicts the fact that German/Nazi are more humane: They like good food. That's why they didn't blow that restaurant. Finally, it reminds the viewer that French people did work with the Nazi.

In most movie, Nazi are depicted as just plain evil people with no feeling but loving to kill others. In this movie, some are depicted as father, people who like to party, eat and so on. In this situation, the strudel is not THE reason why Landa is suddenly a humane person. It is just part of the scene, like many other objects (i.e. milk, coffee), to show that in war, there are not truly 100% good and evil sides. Both sides wish to live a "normal" life, but can't
