This will only work if your iPod Touch/iPhone is jailbroken

Go to Cydia

go to Tweaks

5 column springboard or something like that will be the name

same thing for the dock

apply in Winterboard

just type in 5 icon in cydia

you can get 6 if you use Rock

just go into cydia and look for it

you can get the 5 icon dock or the five colum option

however if you get the tive column option it looks very tight and compact. five icon dock is ok, you can stick like a radio app (unless you got 3gs)
