  • So im sorry fo so many posts but i would love you to do a flick on how to do a Cantonese BBQ pork you know the one they serve in resturants with the pink glase on the out side. I need to know how to prepare the pork tenderloin. This dish is baked in an oven but i would love to cook it. I like all of you cooking classes thanks for taking the time to do them. As much as i clame to know i still look at a lot of chinese Asian cook classes and Iron chief to lean more from extreamly tallented cooks.

  • Hoiseng, char sui sauce, Ginger, Bok choi, Garlic, Snow peas are other favoets of mine for chinese cooking. Ginger and carlic go well with bok choi dishes or seafood and work well to become the main flavores of a dish in this case i would not add any other sauces. Cashew nuts, are good to add to chicken dishes but in a light type sauce to not over power them. I can cook heaps of dishes and ive not used corn starch or rice wine yet, I will though. Im keen on the Cantonese BBQ pork next.

  • My two Favoret foods are stirfry and currys. I looked at losing weight and looked at the nations that have the healthiest looking people. My concusion was Asian, Chinese and Indian people are rarley over weight they must be eating well. So off i went to buy my brand new Wok. Ive never stuffed up cooking in a wok its very easy to cook with as long as one has the basic principles. Good produce and freshness is the key. Do not stew the meat in a wok cook in small portions and keep heat up.

  • Just on the vegies i use, Shatarki mushrooms are a favoret, Carrots,onion,peas,beans,bocol­i,cabage,capsicum,spring onions,water chestnuts,sprouts,baby corn. As for oils I generaly use peanut oil and i like to flavor with sesame oil. I like to use fish sauce chilli oe even Tobasco sauce in recepies i want to spice up. I prety much use what ever i have seasoned vegies and what meat be it pork, chicken,beef,seafood. slicing meat thin against the grain except seafood and make it as i go.

  • Chinese food is the best, i love wok cooking Usualy i just cook the prepaird marinated meat in a wok till brown then add fresh vegies the heat of the meat and wok steams the vegies i like them still crisp and full of fresh flavor sometimes i add Kantong cooking sauce to cheat but im interested in using corn starch now in my cooking. i make my own marinades using various sauces such as soy and oyster or chinese BBQ . Rice win is something im going to use next as well.

  • Try that: When you marinate the meat try to add a tiny amount of water and sugar with the corn flour and make sure you mix it evenly (IMPORTANT). Otherwise corn flour lump would be everywhere. Also add a bit of Shao Hsing Rice Wine to bring out the full favour of the meat. The older generation love adding rice wine to most meat dishes.

    In Holland it's more common to use potato starch/flour, which appearantly is more healthy, but I find corn flour to be more effective.

    Maizena is another name for corn-flour in Holland.

  • I dont disagree with changing recipes for the Western market. However, you can still cook authentic Chinese dishes in the West WITHOUT changing it too much (unlike what she has done)!

    Reply to TimLuo04, there IS such thing as the "real dish", especially when you are talking about some traditional dishes such as beef in oyster sauce or Sichuan hotpot! Only because you have been to China and you carry and Chinese name, it doesn't been you know it all.

  • Well the best chinese chefs i spoke to were men. They often worked years and years as dishwashers and vegetable cutters before even getting a chance to touch the wok.

    And most domestic kitchens don't have a proper heat source for a good wok experience anyway.

  • @NattHrafn true... i used to work with turbo gas burners that gives out 100,000btu and after moving to another country and using electric with about 20,000btu... its a pain in the ass to use wok techniques... however cooking real tasting chinese food is still possible at home using western techniques albeit with alot of modifications and in alot smaller batches

    There's no such thing as the "real dish". I've been all over China for many years, and let me tell you that the "traditional" dishes have almost never tasted the same between 2 restaurants.

    A dish is what you make of it, and as long as it tastes good you can call it whatever you like.
