  • THANK YOU! My husband makes the worst hard boiled eggs (green yolks). I've been trying to figure out what he's been doing wrong compared to my grandma, and this is it. My grandma uses almost the exact same method and my husband just boils the hell out of them. Grandma's very far away so thank you for the video so that I can see it being done!

  • @MidgarMerc Fill a large bowl with cold water and peel them underwater. It really helps them come out cleanly without any bits being ripped off with the shell

I personally like runny egg yolk when I eat eggs with salt and white bread, but I like hard yolks when I want to eat eggs with mayo or baked (fried? when you break the egg on hot oil and crisp the bottom but keep the top white with yolk in the center, dunno how that cooking method is called) with sandwiches

  • Saw a comment about getting shells off the egg.

    I had the same problem. Pieces of the egg white were coming off with the shell. The egg itself was delicious though. Tips for getting the egg shell off? Problem was that it was stuck onto the egg white (and fragmented into really tiny pieces).

  • @TSandwichMan You didnt properly cool the egg after boiling it. Try stopping the cooking process with icewater the next time and see if you notice the difference.

  • I used a pot almost exactly like the one in the video, that is, heavy stainless steel. I brought the water just to a rapid boil (he says only a simmer), then took it off the heat, covered, and left them for 17 minutes. My eggs were NOT undercooked, but they would have been if I had followed this video exactly and only simmered the water. So if you're using this method and they come out undercooked, try boiling the water instead. Experiment with one or two eggs for each method, and good luck!

  • I just made hard boiled eggs using this video... it came out fucking perfect, looked JUST like the eggs in this video.

    Only thing was they were hard as hell to peel. I didn't use fresh eggs, but I also didn't use eggs that were about to expire. A couple egg shells took some egg whites with them but I just took that as an acceptable loss.

  • Worked pretty well - I pulled my eggs straight from the fridge. I let them sit for a minute or two after the water started boiling before turning off the heat and covering.

    Only problem I had was peeling. They didn't peel so easy.

  • Just tried this using eggs directly from the fridge. I used a stainless steel pot like in the video and I let them simmer for a couple minutes before I turned off the heat. I let them sit a minute longer than I should have then I emptied the hot water and put in cold water and waited 6min.

    The result: Good

    The eggs are hard to peel, but I suppose that's because they are so fresh. The yolk is cooked perfectly. It's yellow, soft, and has no grey/green around the edge at all.

  • I made sure my eggs were room temperature and I carefully stuck to the times and everything came out just fine. The only I had was that I lost like almost half of the egg white while peeling because it just stuck to the eggshell

  • the eggs can't be straight out of the fridge, they have to be room temp. that way the yolks are pretty centered and they'll cook all the way.

  • Have to agree with other people. Didn't work. Waste of 4 eggs! Damn!

  • Does NOT work. Everybody, all you need to do it fully boil the water with the eggs in it, then once its FULLY boiling, remove from heat and place lid on top of it for 15 minutes. Then pour out water and refill with cold.

  • This does NOT work... stick to boiling your eggs people. Don't waste your time on this shit unless you want your eggs to be soup. This isn't a difficult recipe by any means, and I did it exactly to the tee. Find another recipe.

  • My method is similar but I salt the water first and let it sit for 12 min. Then again, I like the yolk a little soft boiled.

  • Chef John, please, don't ever go down this far again. No good even to teach these people how to spread butter on their toast. Some will say it's better to do it from left to right, other from right to left and some, believe-me, from the bottom right or left...whatever. If they cannot boil an egg properly, too bad!!! Eat it raw! About your other excellent recipes they won't bother because they are only interested in boiled eggs.

  • to those who say this way doesn't work it's because you're using a cheap pot. If you're using a good heavy stainless steel pot, it should retain enough heat for the eggs too cook fully.

  • hope this works, mydad goes to bed early so if this works it will be a good way for me to cook eggs, i just took them off the heat now, and im gonna wait the 15 min, and ill get back to ya and let ya no how they turned out!

  • i put the eggs in and sumerge them with cold water. than when the eggs begin to actually boil not just simmer/buble. i turn the burner off and cover the eggs. leave them for 12mins. than i always take a bowl and put some ice cubes in it and fill it with cold water. than put the eggs in it for five mins.

  • @Prototype952 well, if you would actually think for a second, thats why we cover the pan as soon as they start to bubble, the cover on the pan traps the steam, and the heat in the pan, allowing the eggs to cook...

  • I have seen on several other video's that you can peel the ends of the eggs, then blow (blow, blow) and the eggs will come out of their shell. Have you seen this or tried this method?? Looks a bit ridiculous but heck if it works.

  • i did this method and it turned out perfect. I was a skeptical about them turning out 'perfect' so i tried it. they turned out better then my moms which the yolks were way to ashy but these turned out perfect.

  • After reading other comments I was skeptical about this method but I tried it anyway. I let them cool completely (sit in cold water that I changed frequently) and they turned out perfect, just like the video! I used eggs right out of the fridge also.

  • I bring mine to a full boil, remove from heat and let stand for 20 mins--I also add vinegar before putting on lid to let stand (this makes it easier for the shells to come off)

  • Okay, but this kind of breaks an international law of cooking. It is to be taken as a given, that when eggs are called for in a recipe they are ROOM TEMPERATURE. Like with butter, one can be sure the recipe means unsalted. These are accepted norms. But that's okay, you're still da best.

  • I tried this method twice, once with eggs from the fridge and again with the eggs at room temp. I followed the instructions to the letter and still they were soggy. Can't believe I've wasted 6 eggs!

  • I have just tried it and the result was just like in the video. I used large eggs from a really cold fridge and they got perfect. So, I assume that everyone who had problems with boiling the eggs to perfection had frozen eggs or just forgot to switch on the stove... ;-)

  • Maybe some of you didn't let the eggs sit in the hot water long enough. I had room temp eggs sit in water until it started to boil like the video. I turned the heat off and covered the eggs for about 15 minutes. I tried to cool them for a bit in cold water but I had to leave so I just put them in my bag and went to class. I just ate them now and they were perfect and I will definitely cook them this way again.

  • Terrible recipe,  the eggs must boil for a few minutes, not just until the water starts boiling, I followed this recipe and my eggs were severely under cooked.

    i suspect your method needs room-temp eggs.

  • Okay now i tried this and the eggs turned out undercooked.. The white was too soft to handle being peeled. I ate them anyway.. I think the "AS Soon As they Simmer" line should be changed. @ 0.34, it not hot enough. It should be turned up so the bubbles are twice as big shown in the VID.. I went by that VISION .. It's not hot enough for a 17 min sit.. Esp. in cooler climates countries..

  • The classic method that I learned was to boil for 3 mins and let them sit for 10 mins.

    They always came out perfect.

  • well if u herd u wait about till the water starts to boil u see bubbles then the eggs start moving then u turn of the stove put the lid on and wait a few minutes or like he said 17 minutes

  • No, this just isnt working. You need to keep them in the boiling water for a minute or so. If you pull them out too soon(like in this clip) they wont really be "hard" boiled eggs.

  • Firstly, what I do is, get COLD water and stick it in your freezer. Then put eggs in a hotish water. Then wait 12 mins on high heat. Take eggs out with a scoop, Then take the bowl out and stick the eggs in. Takes about 5 mins depending on the water, for the eggs to cool. Then crack and serve with salt and pepper! 'O'
