No difference. Kung-fu and gongfu are both transcriptions of the Chinese 功夫。It means "mastery", but also "time" (like in time invested in mastering some skill...).

In 1992, the Chinese gov't realize that they can make a lot of money off foreigners who want to learn gung Fu, so they charge you to train with the monks. Consequently, you aren't treated like a monk and I'm pretty sure you don't even get to train all day, which takes a lot away from the experience. If you are willing to train with them, show them your determination and willingness to train all day, and i think they'll let you :D.
@TIgervenom07 Sure, they work out with weights, but they're not doing it to get big muscles or the like, but very specific exercises, each of which has a special martial application. They're also working on special discipline techniques which can have serious damaging and even killing power after several years of work. They have always used weights in Shaolin which is very external and hard in their training, until you get to the much higher levels which gets more into internal, like tai chi.
@Gungfuman77 my sifu is teaching us to strike with our core and push off with other body parts, and that muscle is just for taking impact. but does as well help us in strength
@zedmlftw1023 Yes... using the entire body when punching, timing it with shifting stances and using the legs, core and arms in perfect sequence can and does greatly increase ones punching and striking power for sure. Of course using too much weight, anything more than 25 to 30lbs at most, might get you bigger muscles, but will actually decrease your striking and punching power. This is why even Bruce Lee used to punch with no more than 10lb weights when doing certain exercises.
