I made this with pineapple tidbits and red peppers. I also reduced the sugar to 1/3 cup from the 1/2 and it was SPECTACULARLY good! MOTS loved it and so did Max. I warmed it up at work and the smell was drawing people out of their offices to find out what the heavenly aroma was.
This is now part of my "what to do with chicken" repertoire

Oooo.. you came to see me near waikiki and didnt bring any of this chicken.. we need to talk. lol. looks delish. i think im gonna have to try this. i love pineapples and you know i LOVE chicken. haha. i was looking at your wooden spoon. jason got a wooden spoon, was making your red velvet brownies, poured in the red food coloring and forgot to take out the spoon. so now he has a pretty red wooden spoon. hahaha. dont tell him i told you that story..lol

@Elvis66 It shouldn't matter if you use the crushed sort. I think this was done to make it look pretty. If you are just eating to eat, and not showing it off, then hells yeah you make it like you want it! I would make the green peppers cut smaller. Easier to eat it that way

@jcrefasi1 because pineapple does not mean Hawaiian! lol I dunno. It was never served at our family luau, and we never really had baked stuff growing up except at Christmas or birthdays, and it was just never made! Just like deviled eggs. Never had them--they are just not made here.
I've never liked pineapple with chicken but I recently had a pizza with both and loved it. Now, I have to rethink that combination. I have to say the final product does look delicious.
@Perroquet51 It was very good! I've always liked pineapple in pretty much everything, especially ham/pineapple on a pizza (others think I am WEIRD when I do that). This is basically just a sweet and sour chicken dish done in the oven vs. in a fry pan ;)
@Perroquet51 Do you know that I have never eaten one! Much less made one. It is, however, on the list of things to do. I may have to do it tomorrow since I opened a bottle of cherries for Bain to have a few :)
@CookingAndCrafting I'll hold you to it. I think I made one a long time ago but didn't like it cuz it was drier than I like. There's also a delicate balance between perfect and overly sweet.
