The Mudcrab was added as an "Essential NPC" meaning it cannot die. If you'll notice the message at the top of the guy's HUD " Gargantuan Mud Crab is unconsious" most likely means the Giant Mudcrab is also considered his "Partner"

Technically the thing died since the imperial legion arrives and knocked it out several times, but it was set as an essential NPC and added through the construction set without doubt.

You could even open console, select the crab and type in Kill, and it wouldn't die!
