For the more traditional hasselbackpotatis, use butter instead of olive oil. And garlic is also a later variation. Neither olive oil, nor garlic were widely used in Sweden until the late 1980's. Also, the original recipe calls for fine breadcrumbs to toast on top of the potatoes towards the end of the cooking. Panko is a nice variation choice.

Love this version of a very old traditional potato recipe. I see comments that someone else has done a different style or added bread crumbs. That's the beauty of re-inventing a classic and being able to personalize it. The Idaho Russet Burbank variety was not invented till 100 years after this recipe was served at the hotel, but in the true spirit of creativity this russet works great in the recipe.

Could I use a scalloped potato sauce on this and bake them in a casserole dish rather than on a cookie sheet? I think that would be such a fancy way to serve scalloped potatoes.

A Swedish trick is to put the potato on a wooden spoon while cutting it. If you can figure it out, it's way easier :)
