I don't know if it's any help, but I noticed that in the thinner part of the squirrel tail, the dough had browned a bit while baking, whereas the rest had stayed pale. Perhaps the timing was a little off so they 'burned' a bit and ended up crisper than normal? It's possible their times aren't quite right so maybe a tiny bit shorter cooking time might make the cookies softer

@maydaiye - If you're studying abroad it's likely you'll have a support network to help you along. And while learning some Japanese beforehand will make your life easier, it's not necessary to be fluent. You'll learn as you go. Good luck!
