  • I got just one Shun knife along with a bamboo cutting board for a wedding present. This combo is easily the most used items in my kitchen.

  • @Luciddv I hate to tell you, these knives look pretty, but are not worth a damn. I am a professional chef, and professional sharpener. I encounter at least one or two of these knives every day that need to be fixed. In fact, I have never dealt with a Shun that did not have rust, or a chip caused by rust.

  • @gm508088 Because people do not wipe them down or care for them. If you use them for slicing and only slicing carefully, making sure the wipe it every few slices, then they are great knives.

  • @gm508088 I am a professional Chef an sharpner as well and I have never had any rust or chips in ma Shuns. And ma Shuns have taken alot of beatin from high numbers of covers an the prep that comes with it.

  • @gm508088 I sincerely doubt that you are telling the truth; VG-10 is highly rust resistant, and SUS 400 series stainless is even moreso, anybody who has their kitchen knives rusting is simply too incompetent to care for quality tools. I use 52100 and 1095 steel in the kitchen; no rusting at all with very little maintenance.

  • @RebelWrestler45 I've sharpened many many Shuns, and never once have I seen rust. My Shun Elite had tomato left on the edge for a few HOURS and didn't even stain. Don't listen to these guys.

  • @MrKnifeFanatic Definitely, the SUS 400 series stainless that Shuns are clad with are almost impervious to rust due to their super high free chromium content, and VG-10 itself is very rust resistant. A year or two back my mother left my dad's Shun classic Santoku in a full sink overnight (oh yes, bricks were shat) without the slightest bit of discoloration, much less overt rust buildup. Btw, I'm really enjoying your vids; good to know I'm not the only hooligan shaving w/ knives

  • Paying someone to sharpen your knives that you are so enamored with is silly. So is crawling down behind whatever props you have to talk about them. I learned to sharpen knives by getting a bunch of old beat-up carbon steel pocket knives and practicing awhile on some Arkansas stones until I could do it reasonably well, and it didn't take that long. Final polish on a fine white ceramic stone really helps keep the edge a long time. A steel is not the best solution.

  • There are a couple of (old) comments about Alton Brown "selling" these knives. No, he is endorsing them, which I take seriously because he doesn't endorse a lot of things - he isn't trying to make a fast buck, like some other *cough* Guy *cough* chefs are. Also, he DOES have his own brand of Shun knives, but these aren't it - they're called Alton's Angles, and the only difference is the angle of the handle is tilted upwards to make holding the knife easier. That's it. I have a Shun and I love it

  • Construction, my butt. Those knives may have forged blades, but by no mean are they "fully" forged to the handle. I've broken several of the Shun knives to inspect the structure and they are welded to a metal rod which goes through the handle to a nut which is also welded to the very thin bolster at the end. Which leads to poor construction. And also, those effects on the blades many call Damascus blades. it's just an effect created by smashing the metal with pressure to create permanent Ripples

  • @Jorgelaine The knives are drop forged, and they have the classic Japanese tang design; plenty sturdy for any kitchen uses. And all damascus is created by forge welding and folding 2 or more steels together; it is impossible to 'smash metal with pressure' and get it to stay together. Shun's classic line are of san mai construction SUS410/SUS431 damascus forge welded to a core of VG-10.

  • Shun doesn't stand by the warranty. I had a tip break under normal use after less than 6 months use. I sent it in and they filed it down. Turned this 7 inch Santoku into a 6 1/2 inch! I'm selling all my Shun classics and will never support this company again!

    If your knives are rusting, it's because you're too thick to treat them properly -your best bet is to buy a cheap and cheerful knife from Wal-Mart ,dopey.

  • @paintedmind - no, actually it's because they are inferior pieces crap. My wife is a fine chef and we have quality cutlery from all of the best makers. There is no other high quality knife that can not be soaked for a short while in water without rusting. The company also prescribes one particularl brand of cleaner which is ridiculous. Fine knives should not rust. Your rude and obnoxious comments lead me to believe that Wal-Mart maybe the only thing you are familiar with.

  • @jessthehorse Wow, Chill out Larry, You should take it easy at your age - (by the way we don't have Wal-Mart in my country, just good National health insurance, and, thankfully, not too many of your bombastic countrymen!)

    PS My favourite knives are made by Wusthof - happy cooking Mrs Larry!

You can ask a professional knife maker, and they will tell you Go check out Bob Kramer's web site, he hand makes the best kitchen knifes in the world. Carefully read the section on care of his knives. He knows far more than 99.999% of people on knives, so skip the Walmart cracks. Shuns are not inferior pieces of crap-when properly cared for, they do not rust.

  • @jessthehorse Fine knives should not rust? ALL MARTENSITIC STEEL RUSTS! It is possible that you got a counterfeit Shun, but by the way you're talking, it's probably just incompetence. VG-10 is highly rust resistance, surviving many hours in a salt water immersion test before any visible signs of iron oxide formation.

  • @BeeRich33 I think you can ship knives though, you might have to tell the post office or something but you can ship anything, you just cant ship explosives or drugs...i might be wrong though, but ive purchased a knife set on ebay and they sent it ups.

    He obviously knows what he is talking about, and he presents it in an inviting manner, but I think it is good to add that Shun knives get sharpened and honed at a 16 degree angle, for those using whetstones and ceramic rods :D

  • Been using one almost two years.  Only honed twice. Keep it in a soft drawer by itself or a block... it's a balanced tool for any variety of chef. Pivots like an extension of your arm.

  • They are very sharp (looks-wise as well as the edge) - be very careful! I was peeling apples with the parer and it slipped out of my hand. The knife impaled the side of my big toe (I was barefoot at the time). Ouch! It made a clean cut, though - no stitches required. I guess I should have known better than to be barefoot in the kitchen.

  • shun knives, the classic, elite, and the ken onion are all fake Damascus steel. they are clad, meaning in these knives electroplated to look like Damascus steel. carefully read a disruption about the knife and you will see. its the vg-10 steel that makes the knife.

  • @mrbeligos It's not electroplate, it's actually a technique called "forge welding". True damascus almost doesn't exist anymore. If you want, look into "wootz steel". That's the closest thing we know of being real damascus. The wavy lines in the metal were actually ceramic nanotubules in the steel. Crazy right? From medieval Indian blacksmiths.

  • @mrbeligos I NEVER said SHUN was wootz steel. I was simply informing people of what true damascus is, or at least the closest we can get to it nowadays. Shun is FAR from wootz steel. they are nothing alike. I'm sorry for the confusion, but thanks for pointing it out if I was unclear.

  • @mrbeligos I've been taking flak lately, have to set your comment totally straight. It is Clad, true. But it is NOT Damascus. It only LOOKS like Damascus. Wootz steel is what modern blacksmiths think of as true Damascus. They aren't even sure they have the process right. It was lost in the sands of time, literally. India's blacksmith's perfected it. All aside, the weight is nice, the edge retention is nice. I can't complain. It's a matter of personal taste, nothing more.

  • @soulfly7112000 damascus is inferior steel, the entire process was to try to make crappy steel better by evenly distributing all its elements...todays laminates and purpose made steels are FAR, FAR superior...the reputation of damascus is myth, folklore and hype... Japanese Tomahagane, which is also surrounded in hype and myth is also far superior to damascus.

  • @jedirifleman Yes sir, you are correct. Tests done on damascus have showed that it was superior to any steel of the day, but AEB-L blows it out the water.
