I encounter at least one or two of these knives every day that need to be fixed. In fact, I have never dealt with a Shun that did not have rust, or a chip caused by rust.
@gm508088 Because people do not wipe them down or care for them. If you use them for slicing and only slicing carefully, making sure the wipe it every few slices, then they are great knives.

Paying someone to sharpen your knives that you are so enamored with is silly. So is crawling down behind whatever props you have to talk about them. I learned to sharpen knives by getting a bunch of old beat-up carbon steel pocket knives and practicing awhile on some Arkansas stones until I could do it reasonably well, and it didn't take that long. Final polish on a fine white ceramic stone really helps keep the edge a long time. A steel is not the best solution.
There are a couple of (old) comments about Alton Brown "selling" these knives. No, he is endorsing them, which I take seriously because he doesn't endorse a lot of things - he isn't trying to make a fast buck, like some other *cough* Guy *cough* chefs are. Also, he DOES have his own brand of Shun knives, but these aren't it - they're called Alton's Angles, and the only difference is the angle of the handle is tilted upwards to make holding the knife easier. That's it. I have a Shun and I love it
Construction, my butt. Those knives may have forged blades, but by no mean are they "fully" forged to the handle. I've broken several of the Shun knives to inspect the structure and they are welded to a metal rod which goes through the handle to a nut which is also welded to the very thin bolster at the end. Which leads to poor construction. And also, those effects on the blades many call Damascus blades. it's just an effect created by smashing the metal with pressure to create permanent Ripples
@Jorgelaine The knives are drop forged, and they have the classic Japanese tang design; plenty sturdy for any kitchen uses. And all damascus is created by forge welding and folding 2 or more steels together; it is impossible to 'smash metal with pressure' and get it to stay together. Shun's classic line are of san mai construction SUS410/SUS431 damascus forge welded to a core of VG-10.
Shun doesn't stand by the warranty. I had a tip break under normal use after less than 6 months use. I sent it in and they filed it down. Turned this 7 inch Santoku into a 6 1/2 inch! I'm selling all my Shun classics and will never support this company again!

I have purchased a set of Shun Classic knives and the edge chipped on each knife. BAD INVESTMENT!! I suggest buying a good German or French knife on ebay and have the factory edge removed by a professional sharpening servicedand replaced by a convex edge with a micro bevel. The knife will cut great at a fraction of the price

I'm a huge fan of Alton Brown, but wait a minute, this isn't a clip of Good Eats, is it? I know that Alton had his own line of Shun knives, so is this some sort of supplementary video that came with the knives?
Been using one almost two years. Only honed twice. Keep it in a soft drawer by itself or a block... it's a balanced tool for any variety of chef. Pivots like an extension of your arm.
They are very sharp (looks-wise as well as the edge) - be very careful! I was peeling apples with the parer and it slipped out of my hand. The knife impaled the side of my big toe (I was barefoot at the time). Ouch! It made a clean cut, though - no stitches required. I guess I should have known better than to be barefoot in the kitchen.
shun knives, the classic, elite, and the ken onion are all fake Damascus steel. they are clad, meaning in these knives electroplated to look like Damascus steel. carefully read a disruption about the knife and you will see. its the vg-10 steel that makes the knife.
@mrbeligos It's not electroplate, it's actually a technique called "forge welding". True damascus almost doesn't exist anymore. If you want, look into "wootz steel". That's the closest thing we know of being real damascus. The wavy lines in the metal were actually ceramic nanotubules in the steel. Crazy right? From medieval Indian blacksmiths.

@mrbeligos I've been taking flak lately, have to set your comment totally straight. It is Clad, true. But it is NOT Damascus. It only LOOKS like Damascus. Wootz steel is what modern blacksmiths think of as true Damascus. They aren't even sure they have the process right. It was lost in the sands of time, literally. India's blacksmith's perfected it. All aside, the weight is nice, the edge retention is nice. I can't complain. It's a matter of personal taste, nothing more.
@soulfly7112000 damascus is inferior steel, the entire process was to try to make crappy steel better by evenly distributing all its elements...todays laminates and purpose made steels are FAR, FAR superior...the reputation of damascus is myth, folklore and hype... Japanese Tomahagane, which is also surrounded in hype and myth is also far superior to damascus.
@jedirifleman Yes sir, you are correct. Tests done on damascus have showed that it was superior to any steel of the day, but AEB-L blows it out the water.
