The reason for the ridges and big hole on the Hario is to help with the flow and to get the brewing to be around 2:30 minutes for 10-12oz to extract all the good flavors and leave the bitterness behind. And of course you want to use kettle with thin spout like the Hario Buono to get total control over the brew. I personally even with good technique and the Buono kettle have never avoided bitterness with 1,2 or 3 small hole cones.
This was okay. But there a few things you're missing. 1) Weigh the beans. 2) Brew on top of a scale or dose water. 3) Use a pouring kettle. 4) Your water was not hot enough. If you transfer the water from a a heating kettle make sure its at 212 deg F so when you lose temp. it will be good for brewing. Other than those things this was pretty good. Maybe a tad too much exposition, but pretty good.
You talk too much. Too much saying the same thing over and over again. Shaky camera work.
