That's awesome. I have also noticed that freezing causes the moisture to freeze, of course. When that moisture freezes, the ice spilts the plant matter, and when it is thawed, the tobacco will dry out very quickly. Also, freezer burn, maybe. Not sure about that one.
I would say no, mason jars are the way to go, it last for years that way, and definitely buy Ball jars not only because they are good quality, they are made in the U.S.A. :-)

As for the jars-- the french mason type flip-top jars seem to be excellent (as will any sealed glass vessel).

You could get those little moisture discs, and put it in the jars (hermetic or mason). Then after a week refill the disc again, to desired moisture. You could even use multiple ones.
What about purchasing a humidor specifically for storing pipe tobacco? I usually store my baccy in the jars that have the suction-lid. They seem to work -okay- but I go through my tobacco so slowly that I think just the process of opening and closing the jars makes them dry out over time. I'd still keep the baccy in jars but I'd place the jars in the humidor, think it's worth a try?

@AgPipe15 Ive never tried that, but it seems logical that it might work. The only objection I can think of is that many cigar mavens would fear that flavor from the baccy would leech into their cigars. (or marry into them as the case may be)
@SmokeRingsPipeDreams You know you have a point there. I don't know if it might seep into the cigars, but I love my pipe tobacco a little more. I was told this by a cigar smoker at the tobacco shop. So I really dont know what might happen unless I try it myself!
Mason jars are my preferred method of storage. Years later, still comes out perfect. :-)
