I remember finding a roadkilled deer, bringing it home in the trunk of the car, skinning it and cutting it up on the kitchen counter. We ate a lot of venison that year! You are amazing! Do you squeeze your sausage out of the muslin bags to cook them?

Awesome - I did my first canning run on the weekend after buying some nice meat in bulk. I didn't think pints would be good for meat but they are a great size for people without a family. We pay $40/box for quart jars, then $20 to get them here. Makes me want to throttle someone each time I even think of buying more.

I can't imagine how long it would take to fill all the jars you have! LOL We're just atrting out canning dried stuff but after we feel braver, we'll rewatch your videos and try more. What a great deal! Wish I had that many jars to fill. The Wal-Mart here has them for $6 but they don't always have them in stock. I grab them when I can. Just finished canning a dozen jars of applesauce. It turned out great!

Great price on the jars but are they good jars. I tend to go with the ball jars because I've heard bad reports on off brand, made in China jars (like the Mainstay jars).

Wow, fantastic! I'm happy when I can find a case of pint jars for $7.50. The deer sausage, pepperoni, etc. looks great. I made pork sausage from about 15 lbs of shoulder. I can only imagine how much work it was to make all you got there. God bless!

Misty, with the amount of sausage your making you should look into fermentation. It makes room temp stable meats.
