If you jerk the pan around enough you don't really need the extra use of the fork in the pan. The omelet should be yellow..like in your video..but no brown of any shade anywhere. Just made one and had it with some French bread and BUTTER and a little vino bianco. Buon Apettito!

the real French omelette should be made in less than 50 seconds and should not sit in the pan, so yes the process is very similar, to a certain extent, to making scrambled eggs
also the kitkatshuffer, check the video on youtube "Taste Secrets: Omelette" to see a french cheff from the french culinary school, making an omelette the same way it is done in this video

Yeah it depends where you go.. i have seen french chefs scramble and others that don't and i've even seen french country cooks make an omelette that is flat, not folded over but cooked on both sites like a spanish tortilla. In terms of this style of omelette I think the main thing, whether you scramble or not, is that it is not overcooked on the inside.
Just made some earlier today a' la Julia. . .I don't like to fork the eggs in the pan as you show. . . I usually jerk the pan around, or back and forth to spread the egg so as to heat it up. It yields a more creamy inside. . . I love how you complimented the meal with the salad, bread, and vin.

what is even nicer that takes only an extra minute.. is whip the egg whites with the water first then add the yellow. makes it so extra fluffy.
