    So what you are saying here is that all other Prosciutto on earth have nitrates/nitrites? Most Prosciutto is Nitrite/Nitrate free. It is cured with salt and time only. Your statement is very misleading.

  • Nitrates have been used for a looooooong time safely and deliciously. It's like anything, if you eat it 3x a day every day of course it's gonna be bad for you, so is just about anything, that's why you eat well but eat SMART, or better yet get some exercise!

  • This 'No Nitrates/Nitrites' sales pitch is such a scam. Yes, they are bad for you, but curing meat without them is also dangerous, promoting growth of of Clostridium Botulinum bacteria, which causes botulism - leading to serious nerve and muscle damage, even death. (and the meat loses its red color, turning gray/brown/black).

    No, Whole Foods' Prosciutto is not dangerous. ...but it's not really nitrate free either. They use celery juice, which produces nitrates, developing into nitrite eventually
