Seems low and slow because it would be heavy and doing an 'assumed temperature' departure (flex in Airbus), where they choose a lower thrust for takeoff to reduce engine wear and noise over Sydney.
Which runway is that? It seems that all International flights take off from that runway, well at least my last 2 to Shanghai. Going solo this year to Shanghai :)

The great-circle route SYD-EZE doesn't cross Antarctica, but Qantas pilots often go quite a long way inland to avoid the savage circumpolar winds during the southern winter.
