we make ABT's with dove meat in the middle. Im gonna try it this way and mix the cooked chorizo with the cream cheese before I spread it in the pepper half.
If you want to cut the heat down a little, Boil the peppers for about 5 min, or until the peppers get KINDA soft... Stuff the peppers like you did and when you wrap them with bacon, stick a tooth-pick thru it to hold in place... You did a great vid... keep at it... Never thought about using a JERKY CANNON... Next on my list... Thanks..
smoking is much better as long as you dont get over 225 in temp....about an hour to an hour & a half...bacon gets dark & dont come off the pepper as yours did,..great idea though.
Maybe if you prepare the stuffed peppers & wrap the bacon around refrigerate for about 1-2hrs. Maybe if the bacon fat congiles together it won't come off during cooking.
i made them today but cut the peppers in half. I feel it lets the bacon grease penetrate into the cream cheese filling or whatever filling you might be using and it made twice as many. I'm glad I did cause they went fast.
wow those look really tasty! one thing that helps me is toothpicks. i soak them for a while in water so they dont burn up. then wrap the peppers with the bacon. then stick the toothpick right through. it should hold them together well.
this is a few years ago, but i use toothpicks to keep the bacon on :)

The bacon probably stays on better when you cut them in half because it sticks to the cream cheese.

Looks good Sapo!
So is it more grilling than smoking temp wise? need a tooth pick to hold the bacon still.
going to try this weekend, would be nice if we could get fresh peppers here in the mid west. Keep up the good work
