How is it you can pick your ship?

On the first playthrough all they give me are those shitbricks on the carrier that turn like they have lead up their ass....ANYTHING is better than the jet they give me.

Am I missing something?

Yeah, I found out it was only carrier based ships that can be deployed, so there was at least one other ship with good yaw and stability....it pretty much saved my ass.
