Actually I disagree. I have spent loads of money buying expensive kitchen knives and cleavers in the past and now I refuse to use anything other than the Kiwi knives I buy in the Asian supermarket. They are as sharp as scalpels and every few weeks I sharpen them again with my Chef's Choice knife sharpener and they are fantastic! They are relatively thin, but I think this is what makes them so very sharp. Like cooking with giant razor blades.:)
audio was a bit hard to hear when adding the last ingredients for the final steps but I think i can work it out from earler written ingredients good stuff kai I love learning more recipes

I agree with the last comment-- I've learned from lots of people that if there is a faster way to do things, then they will do it, i.e. using canned pumpkin for baking pumpkin pie instead of spending time carving out that pumpkin, using a ready made crust, soup base, etc.. people just don't have the time to do things from scratch anymore, and it's fine, as long as the end result is great!
People who turn their nose up about what is or isn't "authentic" food are not only stuck in the dark ages, they're militant about it and they make me wanna give 'em a slap.
Jerk chicken fried rice isn't "authentic" either but it's freakin' awesome.
Thank God some people aren't afraid to think outside the box or we'd be eating the rancid bland gruel popularized by British cuisine
People like you makes me laugh and sick at the same time.
"Original"? cooking is all about making something with your own twist and make it taste good. Show me an "authentic" recipe. Each restaurant have their own style and own way of making things with the exact same name.

I just bought a cleaver today to try to make this recipe. The blade is messed up after I tried chopping through the bone. What did I do wrong?
sinetheawhy 1 year ago
@sinetheawhy The steel (if it is steel that they used) used to make the cleaver must be very cheap, buy a quality cleaver, it's money well spent

And this doesn't even look like sweet and sour spare rib. It just looks like a normal deep fried spare rib.
