As someone who has been a waiter in various restaurants in many states I think the point is don't lock your employees into a one size fits all scenario that does not fit everyone. A good waiter can read their customers and make them happy. I used to have to try to sell Amish people alcoholic beverages. If I could not sell them alcohol I would get called onto the carpet as to what was wrong with my sales approach. What do you think that did to my tips?

Everyone complains about it without thinking as to the root causes or even why it's happening. Money is power, and thus those who have it want even more of it. For them to have more of it then the general population has to have less of it. We're slowly reverting to the dark ages again.

I'm sure you've heard 'the customers always right',well this just takes it to a higher level of ass kissing. Like the level wasn't high enough at $2.13 an hr, and when depending on tips,not your pay,it's a given.
I work as an IT professional and work under similar rules, but it's called customer service, meeting expectations and meeting your SLA (Service Level Agreement). I've noticed that 'salary' is lexically similar to 'slavery'. There is no 'coffee break' any more. If you take too many sick days you'll be asked to use vacation days instead. Quite different than 30 years ago.
I worked in a restaurant where the servers had to get down on one knee and pretty much be eye level or lower w/ the guests when they took their orders.
