I just got myself some buckwheat flour for making soba noodles. Although thank goodness I have a pasta roller. Homemade noodles are the best. I have a noodle house near my home where they make hand pulled noodles. Like Heaven in your pie hole, yum!

@dawg1157 you can find the knife by the name "Soba Kiri", also called an Udon Kiri, using "noodle knife" or "noodle cleaver" also finds some results

Actually I believe the proper name of that knife is Death Bringer, but I could be mistaken. Hahahaha! I love stuff made from scratch, even more so when it is done in a traditional way and not mechanically even if just created fresh.
