A real refrigeration style vacuum pump will pull a vacuum far better and far, far, far easier.
harbor freight has them for about $100.. a real pump will actually remove water.. the air you are still leaving is 20% oxygen, you know.... a real pump will peg that needle...
@jedijohnny yep, those are Roma tomatoes. I bought the smallest Excalibur dehydrator - Model 2400. It fits 32 large Roma tomatoes so the small size doesnt matter. I like the small size because i can fill it in the kitchen then pick it up and run it in a different room. Its also easy to store in a closet when not in use. I got it from John Kohler's(the growingyourgreens guy) website discountjuicers dotcom for $105 - i found a coupon for $5 off - one word all caps: SAVEFIVE
@woodturningjohn Thanks. It was a relief to find out a tool i had sitting in the garage could seal the jars. I didnt need the plastic bag feature of a big $100+ electric vacuum sealer so it seemed like a waste to buy one just for mason jars.
creative

That is one heck of a good idea. Especially if you had no power. Thank you!

@UserAccountDenied yes but this way uses no electricity which is the point of the video.
a refridge style pump needs power. if you don't have power its useless
