He's not actually that good, really. He's a slow starter and his stamina isn't so great. He can only win if he comes from the back like this. The AI jockeys won't run him this way in the actual game tournaments, so he never wins those. :/

how do i enter my horse into a race like this?

These are training races, set up through the Advanced Mode in the game. Your horse will be in a file named 9000 Trainer Game Horses or such; select that file in the list, then your horse. Then click on one of the other files, and tell the game to select the other horses automatically. There's more details in my blog on HorseRaceGames; look up user Bloodsong.
