It lags because there is too many players that produce too many server requests for the nodes to keep up since CCP has not upgraded to quad core and or octo core servers. They're still using the dual core blade servers from 2006 and the player base has shot up way past what the dual cores can handle.

Look at the video again and count how long it took Concord to take us out. Even if you get to the eject option, the lag will prevent you from executing it as you can see it in the video after we popped the Mack.

If you did then you would know that platinum insurance pays back the cost of the ship, insurance, and sometimes even more.

Besides, insurance doesn't cost all that much if you have enough to buy a Raven in the first place.
