You watch Kitchen Nightmares or some of his other shows in the US and UK where he's a lit fuse ready to rip the head off of anyone, and yet in this series in India, notwithstanding the culture shock and so many pressures and awkwardnesses, he manages to remain so calm and collected - almost Zen.
yup, the moral of the lesson here from the clip is that you NEVER go into tourist type resturants to eat food, you have to go to the poor areas, rural areas, small hubs, local shops, and bazaars to enjoy real food.

See the two about India - completely different that Ramsay's energetic, passionate drive to learn about the UK's got wrong about Indian cuisine. My neightbourhood is NYC known as little India; however, most of the restaurants serve exactly the same buffet crap. Gordon Ramsay's India take had loads more passion and really explored the diverse cuisine. He said he'd grown up eating Indian food. Bourdain's great promoter, Gordon's a top chef.
