  • We love our cheese in wisconsin. Now we can have it anywhere. Thanks.

  • at what point would you add spices or anything else? during heating, with the vinegar, or after/during the squeezing?

  • how much milk??

  • As an addendum, if you have a Goat, or Cow that's giving milk, your in luck, because fresh raw milk is the best ingredient for cheese, period. Don't let the nanny state uncle sam tell you different, Raw milk is fine, like any other food it just needs to be properly handled. Pasteurization is only needed for long term storage and transport. So if you have your own Goat, you can have milk, cheese. I think I want a couple goats now... Talk about MRE :)

  • Doing a little research on easy at home cheese making, this stuff is incredibly easy. Biggest thing is to make sure you have milk that isn't cooked to oblivion. You need nice organic milk, or RAW milk if you can get it. Non organic milk is not milk... it's bleach and puss and water. ALL cheeses taste better when aged, this type of cheese usually tastes best after 12-24 hours in the fridge. Waxing the cheese can help age the cheese long term but for a short scout it will keep just fine AFAIK.

  • little miss muffet?? haha

  • fry it in butter its awsome.

  • Dave does it have to be Whole milk? Or can it be 1 or 2% Please thumbs up to get this question answered.

  • what does the vinegar do?

  • @chrisbaumgartner222 The vinegar causes the milk to separate and curdle....

  • Very cool vid. I always wanted to know how to make cheese and this is a nice simple way, for tha common man!

  • Lol, squeeze the cheese and what you're left with are turds, err, curds.

  • Great video, I tried it myself tonight. Thanks for uploading!

  • i read you can make your own vinegar by adding a lime peel to distilled water and leaving it in a dark place!!

  • what type of milk did you guys use. vit D, 2%, ???

  • Self-reliant cheese wheel lol

  • Very cool im gonna have to try that one What a great kid too reminds me of Sean you should use him more on your vids. Thanks for sharing bro be safe ....NICK

  • Where is cody?

  • Try to add a pinch of salt after you pour (apple/white) winegar. It will give You nice taste texture

  • is the advanced class really hard?

  • If at first you don't succeed try harder. I tried this with ultra pasteurized store bought goat milk. When I added the vinegar I got very fine curds, like a milky slurry. I put a strainer cloth in my wire strainer and slowly poured it in. I gathered the corners and, under a small stream of cold tap water (until cool), I slowly squeezed out the whey. When I opened the strainer I had a creamy cheese. Put it in a small covered container in the fridge. The next morning I tried it and it was amazing.

  • Little ms muffit sat on her tufit, eating her curds and whey.

  • who cut the cheese in the yurt

  • What kind of antlers are those hanging up in the yurt, Fallow Deer?

  • @oertera3 moose

  • if the milk is fresh do you skim the cream before you heat it?

  • This kid really likes his salt.

  • Dave Canterbury for President

  • @sniper4202003 why would you want to do that to Dave? He seems like a nice guy.

  • Comment removed

  • You can use any acid, not just vinegar, i.e. lime juice, lemon juice etc. They add different flavors to the cheese. Raw milk is best for this, the fat is important.

  • dude this guy looks just like me

  • UMMMMMMMM Cheese.........

  • It's not from a fairy tale, it's from a nursery rhyme, which goes like this:

Little Miss Muffet sat on a tuffet, eating her curds and whey. Along came a spider, he sat down beside her, and said, "Hey, what's in the bowl, bitch?"

  • when would you add the seasoning, bacon, etc. to the cheese

  • when the curds have been squeezed break it up then add and squeeze again

  • Great video. Never thought I'd see Dave squeezin' the cheese.

  • "Boom baby, curds and whey, that's the cheese" Dave Canterbury for president

  • Nice job on the yurt videos, i loved them

  • Little miss muffett sat on her tuffet eating her...

  • Cheese and Crackers!! Dave's face was priceless

  • Cutting the curd in the yurt. TFM You guys are the bee's knees and the cat's pajamas! Great Vid!

    Keep on keepin on.

  • Is the whey edible? Can it be used instead of discarded?

  • @envirosponsible the whey skimmed off from making cheese can be used to make ricotta cheese. Keep the cheese in a non reactive pot, and cover it for 12-24 hours at room temp. The next morning, heat the acidified whey with stirring taking care to avoid sticking or burning.

  • @envirosponsible the rest of the recipe is here, biology.clc.uc.edu/fankhauser/cheese/Ricotta/ricotta_00.htm

  • @envirosponsible Whey is edible but not tasty IMHO hence the childrend rhyme little miss muffet sat on a tuffet eating her curds and whey". it was a paupers meal. Whey has protein in it and I've personally used it to bulk up hogs and chickens too. cats love it as well.

  • @envirosponsible curds an whey they use to eat it lik oatmeal

  • @envirosponsible it tastes like hell but it contains A LOT of protein. Actually, from what i gather, it's the best provider of protein (per weight) you could come across. Even bodybuilding supplements are considered "best" if they contain "whey protein".

  • @envirosponsible

when i worked as a shepperd in the swiss alps, we used to give the whey to the hogs, they ABSOUTELY loved it! as far as i know it is quite a common practice.

Also, as long as the whey is fresh, think you can drink it, it's rich in lactose, protein, vitamins and minerals. You can also use it to make othe by products as ricotta or brunoust (which is a traditional norvegian kind of cheese)

  • @LeeUmass My Icelandic ancestors and relatives ( I mean, even my generation ) drank it often.

  • @envirosponsible @LeeUmass My Icelandic ancestors ( I mean, even the generation just before mine) drank it or fed it to the farm animals .

  • @envirosponsible yes i have used it in place of water for pizza dough. im sure there are other uses for it as well

  • Just like in Skyrim with Mammoth Cheese wheels!

  • Ah , the handy creek. Is that where you dump your chamber pot as well ?

  • Nice stuff. Thanks guys.

  • Comment removed

  • self reliance cheese wheel

  • Will try and wife will kill bill

    Thanks good vid

  • is it whole milk?

  • Thanks Dave. Another informative video

  • great video thanks Dave thats a save to the favorite list.

  • Just bought a gallon of milk & made a quart's worth of this stuff. I ended up bringing the milk all the way to a boil & added to much vinegar, still came out fine. It's very easy to make, I even used a bandana instead of cheese cloth, which means you don't need to get anything new. They're not kidding about adding salt though, it's really, really bland.

  • i watched a vid on cheese making, they said that after cheese is properly dried, it will keep for 10 years

  • Mary Muffet sat on her Tuffet eating her curds and whey, along came a spider.........

  • dave whats a yurt?

  • @DualsMeatChevy94 If you go to google and type in "yurt", wikipedia has a nice little article answering just such a question ;-)

  • @booniecap101 it still amazes me how many people expect things to be spoon fed to them...thats one of the big reasons I quit participating in forum discussions...anyway, sorry for the rant...lol

  • @booniecap101 thanks guy

  • well done!

  • You, my friend, are building quite a group of cool dudes!! I am looking forward to completing my first phase of Pathfinder Training and getting to meet those guys in person.

  • Very good, cheers from Argentina!

  • That has to be the simplest recipe I have seen, I believe even I could make that, another quality video Dave, and good job Ryan.

  • Wow! Cracking video. This is on the to do list for sure. Thanks Ryan & Dave!

  • I just took a look at the Mora frost 612 knife destruction test. and from what I just seen that little knife can really take a beating.I watch them stick this knife in a tree and then jump an down on it, didn't break. then they hammed that crap out of it and it still stood up. so in my opinion for the price you cant beat it.. So i just bought one

  • @mogges1 Can't beat em for the price. The lamanated blades have 61 RW steel sandwiched in tough steel. Those are the best blades Mora makes in my opinion & that beats anything close to the price range. I don't know how the Swedes so it, but they forge the hell out of a knife blade. Anyone says those knives ain't tough probably doesn't say that through personal trial. They stand up to tough jobs larger high $ knives are broken on, like busting through chest cavity material. & edge retention? wow

  • Brillant! Great job Ryan & Dave! I'm definately gonna give this a go soon.

  • awsome video ,,,,show us how to make home made cow butter using milk from a goat or cow not store bought stuff (goat milk would be awsome)

  • i like the way you show respect to young people. props dave.....

  • Curds and Whey = Cottage Cheese. You should now make Yurt Cottage Cheese. :)

  • Little miss muffet

  • Great inspirational and informative video. 3rd shift guy here and it's good to go to sleep with some great ideas floating around in my head. LOL I just wanted to say thanks to you guys for the wisdom, and to say to you Dave. My Pastor 'Pat Murray' with The Living Word in Vandalia, Ohio said; 'a great leader must be able to be lead', and you've shown that you are humble enough to be 'lead' and by a young man at that. It's good to see that you are not ruled by pride. Not that I doubted, my friend.

  • It's a shame you threw the whey out, you can make ricotta with the whey, also pigs, dogs, cats love it.

  • I like how it comes out using lemon juice & it's good to salt it, but the stuff doesn't last long.

  • Great vid! Dave, have you done a review on the Trapper knife from Habilis, or will you do one?

    Thanks from Sweden!

  • With the whey you could make a white sauce or some kinda chease sauce. Whe make oure mac and cheese that way and its verry nice to eat.

  • that new knife looks kinda like a chris caine knockoff from a distance

  • I remember it, Dave.

  • Little Miss Muffet sat on a tuffet

    Eating her curds and whey,

    Along came a spider,

    Who sat down beside her

    And frightened Miss Muffet away

  • Cottage Cheese!!!

  • @kessler003 No Yurt Cheese. :)

  • This is an excellent video. It's been a long time since I have made cheese.

  • Made some of this tonight used whole vitamin d milk and added garlic salt and parsley it turned out very good

  • good show

  • milk*

  • What type of mile did you use?

  • Ryan, what is the best kind of milk to use; 1%, 2%, vitamin D? And is the whey useful for anything? I always thought that whey was full of protein. Thanks

  • Does anyone know if the rest of the milk they poured into the creek would still have been useful for something? Drinkable or perhaps something else?

  • Dave, Ryan has a pretty serious skill set for his age. What's his story? Home schooled? Over achiever? Could we get a little more camera time with Ryan? Sounds like he has a pretty interesting story. Great video, btw. Very interesting add to the series.

  • That was awesome.

  • May have already bee mentioned here, A good replacement for that vinegar is lemon juice. Also, the whey can be used in breads Just mix it 1/2 an 1/2 with water for a extra protein boost outta the breads Nother use for that 'cheese' is ta break the curds up into a fine mash, Throw a teaspoon of Baking soda into round a cup a water and stir the mash into this. an ya have a non-toxic water soluble glue.

  • When do you add the salt?

  • "Cheese & crackers" hahaha.Dave looked up at the kid to check he heard it right. Like he was saying a dirty word! Haha, Daves thinking, "Where's the meat in cheese & crackers". Best laugh I had all day.:)

  • What you laughing at cheese & crackers for Dave?! Haha, the way you looked up at the kid when he said that had me in tears of laughter :)

  • I'm glad to see you breaking off pieces of cheese using your hands instead of using the new Pathfinder Knife. Considering the confined space inside the Yurt, it could have been uncomfortable had anyone... cut the cheese.

  • fyi using your process powdered skim milk combined with whipping cream. Following the adding 1 pint cream per gallon of milk produces a cheese as good or better than by using fresh whole milk . using pastorized milk you buy from a store kills alot of the flavor of the cheese do to the effect pastorizing has on the fat in the milk.

  • ryan seems like he has his head screwed on the right way, does he have a youtube channel ????

  • One of the best videos yet.

  • @akagoldminer its powdered by the way

  • Dave, how hard is your advanced class? Im 13 and I bet you I could pass it (:

  • hi, i have used this method with powdered milk and evaporated milk in a can to make this cheese. its good on pizza and its cheap to make. add salt and mix before squeezing....

  • Never thought it was that easy... Should go well with hardtack... Lol!

  • Hey Dave I thought I would let everyone know that this will also work with reconstituted powdered milk as well. I have made some of this type of cheese with podered milk and it turned out pretty good. it is best to use podered whole milk but I have also made it with 2% podered milk.I saw on the coments where someone asked this so I just thought I would let everyone know in case you were not sure if it would work or not but it does.

  • Dave, know you were just expediting making the main point, but that whey is kind of multi-purpose itself. Use it in place of water/milk for making biscuits, bread, or anywhere you would normally use chicken stock. Good video Bro. Enjoyed watching the student teach the Master, something "right" about that process. -=dave=-

  • Dave give the whey to your chickens.

  • you can also curdle the milk useing orange juice.

  • I made some of the cheese. it's not that bad. just needs salt.

  • little miss Muffet, sat on her tuffet, eating her curds and weigh.

  • So when do we get a good look at the trade knife??? I might be interested in one....

  • cheese cracker an Viennese now thats a meal

  • cool vid.

  • dave, do you guys ever do training in or around Alabama?

  • just don't dump the whey out it's great protein viamins and minerals you can use it in alot of ways so don't waste it!!!

  • Nice, I had no idea such a thing was so easy.

    Thanks

    keith

  • great video ive got to try this.

  • Nice demo, but isn't that water contaminated?

  • @loves2spin2 I drink out of it every day?

  • Wow did not know that it was that easy thanks any chance on a way to make butter? just curious and you guys are to mean with that tease on the knife, best to you and yours.

  • I'm freaken doing this

  • I have to try this, Going to mix it with Garlic and Cayenne Pepper

  • Dave it was a childs nursery rhym for that curds and whey story you were trying to remember: Little Miss Muffet sat on her tuffet eatin her curs and whey...along came a spider and sat down beside her and frightened poor little Miss Muffet away. BTW cheers on the cheese!!!

  • Nice vid,

  • Goldie Lox, lmao.

    Little Miss Muffet

    Sat on a tuffet,

    Eating her curds and whey;

    Along came a spider,

    Who sat down beside her

    And frightened Miss Muffet away.

  • Excellent demo and info !! DC you brought back some fine memories of my Father and myself, Thank you !!!

    My best,...JC

  • awesome, i cant wait to try this.

  • Cool video as always Dave. I'll actually probably try and make this, maybe put some berries or nuts in it.

  • hey Dave, is something wrong with your audio?

  • @keyub1 they just dont have mics so the audio sounds kinda off and its hard to hear

  • @xXHSharpXx I guess, but they've never had this type of problem all the other times they haven't used mics. Especially around 0:19 - 0:48

  • Did dipping it in the creel contaminate it? Or is it melted runoff?

  • Fantastic!

  • Great video, Been watching the Yurt series since you started not one of them have I not loved. Keep them up

  • So who cut the cheese???

  • just need some crackers and summer sausage and a nice cold beer!

  • Dave: Mogges here I'm going to order one of your Mora knives. I have a question is this Mora a full tang knife.

  • @mogges1 No Moras are full tang brother that is why I dont recommend them as a main tool, they are all Rat tail tang, still a good knife just understand it's limitations

  • @wildernessoutfitters Will I do not plan on chopping wood with it.Thats always been rule 7 to me, a knife was meant to skin and cut meat with, that's why they invented the axe and saw for wood cutting.I never understood why some one would take a 300 dollar knife and chop wood with it.Maybe its just me

  • @mogges1 Only if you dont have the ax or saw for some reason for sure, it is a conservation of resouces.

  • @wildernessoutfitters LOL I hear ya.Guess I'll just keep carrying my gran dads old Kay Bar. heck he carried it in WW2.guess it'll serve me now LOL

  • @wildernessoutfitters One tool option :))))

  • @mogges1 unfortunately you'll find merchants trying to sell high buck knives hate Mora. Not much profit. Gun sellers hate hipoint too, another great value, not as much profit so they talk em down. If you want a trick to find value pick up what retailers are venomous about. Often it's because it's something of high quality & value, that dilutes nice profits from the hyped products.

  • @tblbaby highpoint guns are cheap but aren't a good value you tube is full of high point vids showing failure to feed issues.

  • @2ndadmendmutt lol, you make a sweeping statement like that off a few video's? YouTube is full of high buck guns failure to feed. 9mm Highpoint needs hotter ammo at least at first, they take a while to break in like about any other semi auto. High Point's are more than stout enough for +P & more. The company is great & there is a life time warranty that goes with the gun. They are some of the toughest most reliable semi autos there is. Problem is the trigger & the bulk. After that they're great

  • @tblbaby "problem is....*

  • @2ndadmendmutt dude, problem is manageable & many people like the bulk in .45acp because my little girl is comfortable shooting it (with 2 hands around the fat ol handle lol) & accuracy beats most. You won't find the perfect gun. Fact is "fact is" for your quotes, lol that the gun beats most $500+ pistols in most ways, and as in anything else, it's about what's important to you. I ain't stickin mine in my pants, but it's nice. I've got or had recently Colt, Walther, S&W & many more, it stacks up

  • @2ndadmendmutt Another tip I'll give ya. I've got a Taurus 24/7 OCC .45acp and it's just sweet. People stick their noses up, but it's an amazing pistol. I got it just over $200 because people have a tude about Taurus. I don't know why I'm saying these things because I'm happy with great guns & low prices because people can be idiot sheep & all into status in their gear. My damned sharing mood gets the best of me & Dave showing all the stuff he does here doesn't help me keep secrets either, lol.

  • @tblbaby i completely agree that bigger bucks isn't always the way to go, i'm not a huge fan of taurus but i love their small 38s. i lean more to revolvers and dont really own any fancy guns but i do like well built no hassle guns like rugers as an example. i dont mind cheap but it absolutely has to work everytime but as you say its personal choice and honestly any gun is better than no gun and its cool as heck that your teaching the kiddo.

  • @mogges1 The knife may not have a full tang, but it is super tough and the favorite knife of Cody Lundin. Check out some of the many abuse tests of the Mora; then determine if it is fit to be your main knife. I have use and abused my Mora for years. And know that any knife can break under the right/wrong conditions. Of course, you can spend more money if you want to. But you may spend more for less. Certainly, I respect Dave's opinion.

  • wonder what that would taste like smoked over apple wood.

  • Does a male goat produce milk to.

  • @MrJacobus97 Not the kind you'd want I'm sure, lol.

  • I love it when my wife Beth makes cheese in the kitchen.

  • Now that could be a new series..... "how to food?" or "The Kitchen of the Yurt?"

Never the less that was a great video.... I have watched alot of your trail food videos in the past and this was one of the best...... Thanks again guys....

  • I wonder how buttermilk would fair.
