First, use a fish basket. It allows you to turn fish without it sticking to the grill and falling apart. Second, don't clean your grill before you use it, clean it *after* you use it, while it's still hot. If you must clean it before you put the fish on, wait several minutes or so until the remnants of your last grilling session burn off completely and stop stinking before you put on the fish. Finally, don't ever use cooking spray on an open flame!!!
