I know my major scale, pentatonic scale, modes of both, intervals, the chords and the common notes in them. But when I'm playing it just comes in snatchs, I'm just going along and I don't think, oh a tritone would sound really cool here, I just hit because I've heard that sound so many times now. Theory is just a way of organizing sounds so you can assimilate them faster, or if you're writing and you get stuck.
