What you're seeing are people who are genuine experts in their field - they are not the meticulously trained actors you see on TV.

These experts are not coached, and they are not used to being on camera, so they act stiff and perhaps somewhat unnaturally.

I don't care - they know what they're doing, and I'd take an actual expert over a chipper, super enthusiastic TV actor any day.
