your variety, I would guess, is 'stampede'... FYI... It's one of the only varieties that I know of that flower before frosts in most colder places (NY state is my frame of reference).
when do you plant it? do you get seeds or just little baby tubers to plant?

You can just grow it by the tuber, much like a potato. I just got some of these from "Whole Food" in Georgia. @jcrev217

@jcrev217 the tubers, i put it in the grown in dec, and it grow out in around March.

Composite Family has both sunflowers and artichokes in it,so they are in the same family as artichokes.
