The old school producers were musicians. Most current producers are DJs and engineers. All they can do is manipulate sound; they can't create new music. Producers like the Mizzell Brothers could either write string arrangements like the one you hear here or hire an arranger. If you say arrangement to a DJ, he'll tell you: "Yeah, you'll get paid." Most of them have no clue. This is the only real reason music sounds so bad. You can't get to #1 if your music sounds like #2...
