well that pan in the left with the holes, has a lower much much much finer strainer, which takes away most of the stuff that messes up the oil... food particles... I reckon in restaurants conditions, he could use the same oil in that filter pan for 2... maybe 3 days
How long would that much oil be able to be kept in a home kitchen using every day? Oil is getting very expensive & I tend to chuck it after every use but using this way I could maybe use it for a week, but would the leftover oil be OK left in a pan on the side as my fridge is small.
