In the oil is where the flavour is. germs can't survive the heat of deep fried oil so it's not unsanitary. The best chefs never clean their frying pans that they use for searing...

It does smell but it really is a normal thing to do. It is odd to western civilisation..it was to me too..I'm Irish like...but it's not puke-worthy...
